Born and raised in the beautiful Balearic Islands, Ismael Herrera joins the Pirata Group team as Restaurant Manager at sophisticated dining destination Chaiwala. With a sommelier course under his belt, as well as a hotel management degree from prestigious EAE Business School and a one-year stint at bartending school, Ismael will be making his first appearance in Asia’s restaurant scene with Pirata Group.
Previous General Manager at global lifestyle brand Pacha Group, Ismael brings over ten years of F&B experience to Hong Kong. Starting off as a General Manager for fine-dining restaurant El Ayoun in Ibiza, Ismael’s love for food and determination for success led him to thrive as an F&B Group Director at Muscat Hills Resort and Beach Club in Oman. While away from the energetic restaurants, you can find Ismael relaxing by the beach with a glass of wine in hand, soaking in the sun.
A familiar face in Hong Kong’s bar scene, Bar Manager Jack Byrne now works his magic on the floor at Hugger Mugger. Jack got his first taste of the restaurant and bar industry in Melbourne while working for The Hyatt. Arriving in Hong Kong in 2012, he rose through the ranks as the city’s food and drink industry flourished, working at some of Hong Kong’s hottest outlets and dominating the nightlife scene. Before joining Hugger Mugger, Jack led the bar team at MEATS, another of the Pirata Group restaurants.
Jack can always be found discussing drinks with guests — whether inspiration for a new recipe, or the history of a spirit; his passion for learning and introducing people to new things is unmistakable. Jack’s drinks have been known to straddle the line between easy-going and experimental, incorporating simple techniques with distinctive ingredients and flavours. His concoctions are sourced and inspired by Hong Kong’s unique and nuanced food and drink cultures.
